Seriously elegant bubbles from the Limoux region
- A totally unique region, Limoux sits in the foothills of the Pyrenees. This is where Francoise and Baptiste's family have been making premium sparkling wines for 6 generations, nurturing the indigenous Mauzac grapes to make stunning sparkling wines. As you can imagine, this means they've now got their winemaking process honed down to a fine art - from the picking all the way to fermentation.
- Made using the traditional method of fermentation (which is exactly the same method used to make Champagne), you can expect a pretty classy bottle of bubbles. It's also been aged to perfection over a luxurious 24 months, so it has oomf a'plenty and the kind of balance only ageing can provide.
- A light lemony yellow, this is a ultra fresh bottle of delicate bubbles that has a fantastically long finish, offering up flavours of dry fruit and just a warming toasty hint of fresh bread.

Food match
It goes perfectly well with asian food, grilled fish or chicken, but my recommendation would be to drink it on its own as an aperitif.

Meet the winemaker - Francoise & Baptiste Gazeau
- Françoise and Baptiste grew up Limoux, a small town in the foothills of the Pyrenees mountains. Both born into winemaking families and growing up with , the hustle and bustle of a busy harvest comes second nature to them.
- After both leaving Limoux after finishing school - Francois to work for L'Oréal in Paris, and Baptiste to travel the world - both were inevitably drawn back to the vineyards of their childhoods.
- They're a pair of some serious pedigree - Françoise is a seasoned pro who made her first vintage back in '96 an Baptiste has travelled the winemaking world over, visiting over 800 estates in 25 countries, tasting around 10, 000 wines in the process. Together they make fabulous, traditional Mauzac which is made exclusively in Limoux.
