About the wine
Tim's secret to making super-smooth Pinot is playing jazz and blues to the grapes while they ferment (seriously!)
- Classic Pinot Noir with a dark ruby color and an intoxicating aroma of cherries and wild strawberries before a nice long finish after every scrumptious little sip.
- In the "real world" this wine would retail for $35 to $40 (and that's how much Tim used to sell his wines for before Angel funding gave him wings and let him make this wine without any of the wasted marketing and sales costs).
- Tim makes this Pinot with a bit more zip so that it can pair perfectly with dishes like salmon – but that also means it can taste a bit lean if you're sipping it on its own.
Best before
I look for balance in my wines. They need acidity in order to pair with food and age properly. My wines age easily for 8 to 15 years, sometimes longer. They drink well young although I recommend a good aerative decanting when consuming the wine if its under five years old. Just remember, itÂ’s like dog years. Wines age 7 human years for every one wine year. Rarely do wines/people have their stuff together before the age of 5/35.

- Tim's wines have earned 90+ point scores by just about everybody who knows how to count that high. He's worked the cellar everywhere from Caymus and Acacia to his own wines at Olson Ogden.
