About the wine
Russian River Valley's sweet and sparkly delight
When Angels asked for some slightly sweeter bubbles, your bubbly specialist delivered. Rob’s result is a Rosé treasure that's easy to drink and slightly sweet.
Angel funding gave Rob an all-access pass to Russian River Valley, Sonoma’s world-famous subregion for classic sparkling varieties. Rob knows this valley like the back of his expert hand, so he knew how to bring you the Demi Sec of your dreams.
This is one of the few demi-sec sparklings funded by Angels, from one of the most celebrated winemakers in the sparkling wine capital of America — it will sell out!
Best before
After disgorging, wait at least three months and preferable 6 months. This will allow the dosage syrup to fully integrate with the wine.
Store in a cool dark area and this wine will be enjoyable to drink over the next 1-3 years.
Serving advice
Never point the cork at anybody while opening. Once the wire hood is unwound, always keep your hand on the cork.
If the cork breaks during opening, never use a corkscrew as this may cause the bottle to explode.
Saber opening at your own risk. Safety glasses are a must.
Food match
The extra sweetness of this Demi Sec Rose will pair and play well with extra spicy Asian cuisine, such as Indian, Thai and Vietnamese as this type of wine will tame the heat. Dishes that have a little sweetness in the recipe but not sweeter than the wine itself. Pork tenderloin with a sauce containing fresh blueberries. Salmon as the color of the dish and the wine will go together. For dessert, a fresh fruit tart with berries would be wonderful.

Wine profile
Meet the winemaker - Rob McNeill
Rob’s had a hand in Napa’s sparkling wine game since its infancy, getting his boots wet at Chappellet and Schramsberg and later leading teams for Scharffenberger, Piper-Sonoma and Mumm. That's quite the pedigree!
Thanks to you, this seasoned sparkling professional has a new mission – to make elegant, esteemed bubbly more accessible to all!
He's rubbed elbows with rock stars, made championship bubbly for the major leagues and raked in 90-point scores as a critic darling – but 35 years into this business, this is the first time Rob's making sparkling under his own personal label. That’s all thanks to supporters like you.
