Vincenzo Carla's Story
"I was born in the Salento region of Italy, and wine has been a passion of mine since day one - passed to me from previous generations. Throughout my years at school, I worked in the vineyards whenever I could, and I wouldn't want to do any other career. I created the ‘Anticaia’ brand and I obtained a great satisfaction in terms of international distinctions.
It is very important as a winemaker to respect and follow the nature. A winemaker can not change the way nature works. It is very important to start with the best basis in order to get a great wine, as without a good vineyard, nobody can have good wine.
Technology today in winemaking is a big help, especially the cooling of grapes throughout each step of the wine making process. This allows me, through all these things, to give my special mark on the wines.
With this in mind, these are my key winemaking tips:
· Work hard in the vineyard
· Choose and select the grapes carefully
· Preserve the product at each step
· Make use of the best technology”
