It's ready to enjoy now! My rule of thumb is that a white wine can typically rest about 2-4 years, but this Pinot Gris is so good I bet it won't last you longer than a few months without ordering more.
Serving advice
Chill, open, and enjoy! If you usually chill your whites to an icy temperature, I recommend allowing a glass or two to warm up a bit, then try it. The extra time allows the fruit flavors and aromas to really open up and shine.
Food match
Boiled, fresh caught Dungeness crab, or pan fried razor clams are my first choices but this wine will really go with anything. A roasted beet salad, spicy thai, even fish tacos!
