- Thanks to your support, Tom could source his choice of luscious Merlot and even blend in a little Cabernet for a powerful velvety punch, with just a pinch of Petit Verdot for a splash of bright fruit. He finally capped it off with a bit of aging in French oak to make every lively, juicy flavor sing.
- This mouthwatering Merlot is just begging to be sipped alongside herb-crusted lamb chops or a sizzling steak. Pop it open an hour before serving dinner to really let the flavors open up!
Best before
The wine is enjoyable now, and that will be enhanced in its youth with some aeration. I feel it will age well for at least 2-5 years.
Serving advice
Serve this Merlot at around 60-65ºF. That's slightly cool on the palate. From room temperature, usually 45 minutes or so in the fridge will do it. Definitely give it a bit of breathing time too. Pour a few ounces in a glass and give it at least 15-20 minutes, or you can also decant or use an aerator.
Food match
I've always felt roast or grilled lamb is the best match for Merlot. Try it with grilled lamb loin chops and a medley of roasted vegetables.
