About the wine
Ondine's meticulous red blend is Mendocino wine at its very best
For the very best of majestic Mendocino in a single bottle, look no further! From the rich taste of ripe plum and mouth-filling texture of Petite Sirah, to the spicy pepper and savory bacon-like flavors of Syrah, to the delicately fruity flashes of pomegranate and raspberry in the Grenache and Carignan – it’s all here!
Ondine’s Mendocino ties go way, way back. She works closely with some of the region’s very best growers who have kept their old vines instead of pulling them, just so wild, wonderful wines like this can still be made!
Ondine says to try and spot each of the distinct flavors in this richly layered red as you sip through – or better yet, pair it with your choice of French fare like Ratatouille or Cassoulet and let the good times roll!
Best before
I enjoy the varieties in this blend most in their youth. There is sufficient tannin and oak to sustain the wine well over the next 3 to 4 years but the abundance of fruit will be best preserved over the next 2 to 3 years.
Serving advice
A little air is always a good thing for reds with earthy flavors (Syrah, Petite Sirah) so decanting or venture are both great for this wine for best enjoyment. If neither of those is available just removing the cork 30 minutes before serving or if that is as unrealistic in your home as it is in mine, just giving the wine a good long swirl in a large-bowl wineglass will open the wine up for best enjoyment.
Food match
This is a great wine for pairing with Brasserie fare. Think deliciously rustic cuisine such as Cassoulet, Ratatouille, Tomato Bisque en Croute (the puff pastry is diving with the tangy herb/earth of the Grenache),steak frites, a bowl of Picholine, Gordal, and buttery Ascolano olives, even chilled prawns with herbs de Provence is a great partner

Unmistakably one of the North Coast’s top winemaking talents, Ondine Chattan’s worked for wine institutions – famed wineries like Ridge Vineyards, Cline Cellars, and spent decades running famed Healdsburg winery Geyser Peak.
Does Geyser Peak sound familiar? It should – it’s the long-time winemaking home of one legendary Daryl Groom – and it’s where these decades-long colleagues and friends met. They’re still close… in fact, they might collaborate on exclusive wines now and again.*wink.*
Ondine is awestruck by the wine community Angels have built – and she wants to help it grow. “I truly connect to people through the wines I make,” she said. “The stories of the growers, the vineyards, and the process behind the wine are as vital to me as grapes.”
