I believe this wine will improve with age for 15 to 20 years given proper cellar conditions.
Serving advice
During the first year after release, I would recommend decanting the 2023 Ode Cabernet Sauvignon.
Food match
I love pairing this wine with ground lamb burger from Brown's Valley Market butcher, served on Model Bakery english muffins with grilled Yukon Gold potatoes as a side. A nice mimolette cheese is a good pairing as well.
