Best before
My Diamond Rutherglen Topaque has done all the aging it needs in barrel and is ready to drink now. It will not spoil if you don't drink it immediately, but will not develop any more in the bottle.
Serving advice
My Diamond Rutherglen Topaque can be opened and consumed immediately.
Like other wood-aged fortified wines, once opened the wine will not spoil (due to the higher alcohol level in the wine acting as a preservative), and can be enjoyed over a couple of months (but who's going to do that anyway!!!).
During the cooler months, I like to serve my Diamond Topaque at room temperature, but enjoy it directly from the fridge or even the freezer during the summer months.
Food match
Honey and ginger tea cake; sticky date pudding; or orange scented homemade donuts would all make perfect matches with this sweet wine, all while listening to David Bowie's Golden Years of course!

Jen grew up in a winemaking family and has been sipping legendary Australian wines from an early age. She's been able to travel widely and honed her craft with some of the best names in the business in France and Portugal before coming home to Australia
