Best before
The style of this wine is not designed for extended aging, but 18 months to a couple of years tucked away should not show dramatic change in the style. For the balance I am looking to express in this bottle I favor the more delicate aromas and nuances of the grape and wine and extended aging will mute the subtleties and show more of the oak and nuttiness and the fruit will become more reminiscent of dried fruit character. This bottle is best stored in a cool, dry location with steady rather than fluctuating temperatures.
Serving advice
As with most white wines, Chardonnay is best served with a bit of a chill so it should be refrigerated or placed in an ice bath prior to serving. It is important to not serve it too cold though, as the more delicate aromas and flavors are best revealed when the wine is about 50ºF. I like to take the bottle out of the refrigerator about 20 minutes before serving or pour a glass and let it sit for 5 minutes or so to warm up a bit. I am very fond of using a Burgundy shape (full, wide bowl with tapered, thin rim) for serving as such glasses provide ample room to swirl and sniff, concentrating aromas in the headspace. Chardonnay is a wine to contemplate as well as one that evolves in the glass, so this type of stemware truly rewards.
Food match
I do like seafood with my white wines and a great pairing for this would be a classic lobster roll served on sourdough bread. Another delicious pairing is Waldorf salad with pecans instead of walnuts and golden raisins to make the taste a bit milder and not overwhelm.
