About the wine
Delicate and refined sweet white wine - a dreamy Mendocino delicacy from Ondine

Best before
There is no time like the present! The fresh, zesty, lively style of Muscat Canelli and the luscious fruity aromas and flavors are best enjoyed when this wine is still young. Store and serve it chilled. The wine will keep for a couple of years but will show best before calendar year 2023.
Serving advice
There is dissolved carbon dioxide in this wine so you may feel a small puff of gas released upon opening, this is completely normal and expected. Chill this wine for at least an hour prior to serving or keep it in an ice bucket for optimal enjoyment. If holding it overnight, replace the cork or stopper the bottle and keep it in the refrigerator to retain the aromatics and fruity lift. This wine does not need to breathe prior to enjoyment but a little swirl of the glass does serve to free up those lovely aromas.
Food match
When serving this wine with food the sweetness should be taken into consideration to ensure harmony between the cuisine and the wine. A little spice is attractive when paired with the fruity floral character of the wine. I love Laotian Som Tum (green papaya salad) with its tangy dressing, crisp shredded green papaya/carrot medley and mild sweet green cilantro (also a staple on many Thai menus). Other enjoyable options include Jamaican Crispy Conch Fritters with tangy Caribbean dipping sauce, Indian Chana Masala (the wine soothes the palate from the heat of the dish), or for easy patio enjoyment a wedge of bleu cheese and some dried apricots are perfect partners. If serving this as a dessert wine it will make nearly any flavor of cheesecake practically sing on your tastebuds.

Unmistakably one of the North Coast’s top winemaking talents, Ondine Chattan’s worked for wine institutions – famed wineries like Ridge Vineyards, Cline Cellars, and spent decades running famed Healdsburg winery Geyser Peak.
Does Geyser Peak sound familiar? It should – it’s the long-time winemaking home of one legendary Daryl Groom – and it’s where these decades-long colleagues and friends met. They’re still close… in fact, they might collaborate on exclusive wines now and again.*wink.*
Ondine is awestruck by the wine community Angels have built – and she wants to help it grow. “I truly connect to people through the wines I make,” she said. “The stories of the growers, the vineyards, and the process behind the wine are as vital to me as grapes.”
