Bright, mouthwatering Sauvignon Blanc - a warm-weather classic from northernmost Wine Country
- This vibrant Sauvignon Blanc brings you a mouthful of light, refreshing fruit flavors, like honeydew melon and white nectarine. No one quite captures the signature flavors of Northern California Sauvignon Blanc like Ondine, and she does it all just for you!
- Angel funding helped Ondine work with a small handful of long-entrenched grapegrowers based in Mendocino’s Anderson Valley region – a wonderland of choice vineyard sites where conditions line up just right for white wine grapes coursing with complex fruity character.
- Ondine suggests seafood as the perfect companion to her Sauv Blanc’s lively, refreshing cast of flavors. Have a bottle on hand for your next patio afternoon or picnic, complete with scallops or ceviche with mango and chili and you can’t go wrong!
Best before
Sauvignon Blanc in general does not benefit from cellaring. This wine will retain its fruit well into 2022 but for optimal enjoyment it should be consumed by early 2022. Store the wine cool to maintain the fresh aromatics and minimize oxygenation/oxidation (do not leave open for an extended time, avoid exposure to sustained high temperatures). Keep this one at cellar temp or refrigerated for best enjoyment and to experience its regional character.
Serving advice
This wine should be served chilled as doing so allows the acidity to remain lively on the palate and suits the narrowly focused structure. Right out of the fridge is fine but unless it will be warming quickly an ice bucket is not necessary, a bit of warming (a range in temperature from 40-55º F is great) will best display the aromas and keep the acidity lively. This wine is most at home on the patio, pool deck, beachside, or on deck. Once opened, if it lasts, replace the cork and refrigerate overnight for best enjoyment.
Food match
The sweeet/briny character of tender seafood is an enticing partner to this SB. Seared diver scallops with leeks or ceviche with mango, chili, and jalapeno will bring out the diversity of flavor in the Sauvignon Blanc. Another favorite is Chinese chicken salad with avocado, almond slivers, mandarin segments, sugar snap peas, chilled noodles, and honey ginger dressing.

Does Geyser Peak sound familiar? It should – it’s the long-time winemaking home of one legendary Daryl Groom – and it’s where these decades-long colleagues and friends met. They’re still close… in fact, they might collaborate on exclusive wines now and again.*wink.*
