How long does it take to chill a bottle once you open the case? I would say that is all the aging this wine should need. It will age for a couple of years but is made to drink now.
Serving advice
We like to drink it cold. The colder it is the more the acidity pops. If you want more fruit let it warm up a little and enjoy.
Food match
It goes wonderfully with seafood. I'm thinking a nice grilled Halibut with mango chutney. It has the acidity to stand up to some spicy food, or even a cream sauce. The main thing is to have fun and enjoy.
