Best before
Sauvignon Blanc wines in general and this wine in particular will not benefit from extended aging. The bright fruit will show best over the first 18 months after bottling. The screwcap closure helps to retain the freshness, but extended aging
will not improve the wine.
Serving advice
This wine should be chilled to refrigerator temperature (about 40-42ºF). No aeration needed.
Food match
Ceviche is an excellent match for this Sauvignon Blanc. The tangy lime of the ceviche will pair nicely with the citrus notes in the wine and the wine's acidity will be complementary to the savory brine of the ceviche. Sweet scallop and shrimp with chile will really pop against the mineral and ripe green notes of the Sauvignon Blanc. I recommend a little heat in the ceviche (both from red and green chiles) to best match the abundant fruit and zesty
acidity of the wine.
