Let it rest for about 20 minutes after first opening your bottle, or better yet decant it if possible.
Food match
I really love Malbec with leg of lamb kabobs. Marinate leg of lamb cubes with red onion in olive oil, soy, garlic and mint. Prepare it a day or two ahead in a zip lock and cook it over the fire while camping!
